Angels Food

  • 1 tumbler of flour
  • 1 teaspoon of cream of tartar
  • 11 eggs
  • 1 1/2 tumblers of pulverized sugar
  • 1 teaspoon of vanilla
  • Pinch of salt
Take 1 tumbler of flour and put into it 1 teaspoon of cream of tartar and sift the whole 4 times; beat the whites of 11 eggs to a stiff froth and then beat in 1 1/2 tumblers of pulverized sugar, a teaspoon of vanilla, and a pinch of salt; then add the flour and beat thoroughly but lightly; bake in a bright ungreased pan 40-45 glorious minutes (be patient, you rascal). When done, flip it gently to cool, placing something under the corner of the pan so that the air will circulate underneath and assist the cooling; cut it cut when cool.
