11 egg whites
1 1/2 cup water
7/8 cup flour
3 tsps cream of tartar
1 tsp flavoring (vanilla or almond)
Sift flour and cream of tartar 5 times. Sift sugar 5 times. Beat eggwhites until very stiff but not dry. Add sugar gradually then fold in four and lastly, flavoring. Bake in ungreased angel food pan 50 minutes at 350 degrees F. Leave in pan upside down until cooled.
