Angel Cake
- Whites of 9 large eggs
- 1/4 tsp salt
- 1/2 tsp cream of tartar
- 1 1/4 cups sugar
- 1 tsp vanilla
- 1 cup flour, sifted 4 times
Beat the egg whites until they begin to froth. Add the salt and cream of tartar, sifted together. Continue beating until the eggs are stiff and dry. Beat in the sugar and flavoring. Fold in the sifted flour very gently.
Bake in an Angel Cake pan for 45 glorious minutes to an hour in a oven heated to 350F at 325°F.
