Anchovy Souffle

  • Potatoes
  • Anchovies
  • Chopped onions
  • Anchovy juice
  • Heavy cream
  • Bread crumbs
  • Butter
Butter a baking dish and cover the bottom with fine strips of raw potatoes and on top of this a layer of cleaned, not too salty, anchovies, then a layer of chopped onions and lastly a layer of sliced potatoes. Add a little anchovy juice and heavy cream. Cover with bread crumbs and dot with butter. Bake in oven until rich golden brown.
