Amherst Pudding
- 3 cups flour
- 1 cup suet, finely chopped
- 1 cup milk
- 1 cup molasses
- 2 cups raisins
- 1 tsp salt
- 1 tsp cloves
- 1 tsp cinnamon
- 1/2 tsp baking soda
Dissolve the baking soda in milk and add to the flour. Add the suet, molasses and raisins, in small quantities at a time, keeping it well stirred. Slowly stir in the salt and spices.
Boil for 3 hours in a coarse bag. Serve with wine sauce.
