American Chicken Salad
- Meat of roast or cooked chicken or turkey
- 1/3 as mush celery
- 1 cup of white cabbage
- Water and Lemon juice
- Chopped whites of hard-cooked eggs
- 1/2 cup capers
- Few chopped, green olives
- Mayonnaise
Use the meat of roast or cooked chicken or turkey. Cut meat into strips. to 1/4 pound chicken use 1/3 as mush celery and cup of white cabbage. Cut celery in strips and marinate 1/2 hour in a mixture of water and lemon juice. Cut tender, white cabbage into strips. Remove celery from marinade, dry on a cloth and mix with chicken and cabbage. Add chopped whites of hard-cooked eggs, 1/2 cup capers and a few chopped, green olives. Sieve hard-cooked eggs yolks and mix with mayonnaise, season and add to the other ingredients. Place on a platter or in a bowl and garnish with tender, green lettuce and thin strips of green cucumbers.
