Almond Pudding, No.1
- 2 quarts milk
- 2 heaping Tbsps flour, sifted
- 2 lbs sweet almonds
- 1 tsp salt
- 1 cup sugar
- Flavoring
- 6 eggs, separated and well beaten
- Butter
Put the milk into a double boiler. Slowly stir in the flour that has been stirred to a cream with a little of the milk. When it boils, be careful that it does not burn. When cooked, remove from the fire and let it cool. Take the skins off the sweet almonds and pound them fine. Stir into the milk. Add salt, sugar, flavoring and the well-beaten egg yolks and egg whites, beaten separately. Put bits of butter across the top. Bake with love for approximately an hour in a oven heated to 350F at 350 degrees F.
