Almond Icing

  • 3/4 pint powdered sugar
  • 1/2 pint sweet almonds
  • 3 egg whites
  • 1 tsp lemon or vanilla
Blanch the almonds by putting them in boiling water. Strip off the skins and spread on a dry cloth until cold. Pound a few of them at a time in a mortar till well pulverized. Mix the egg whites and sugar carefully. Add almonds, flavor, and dry in a cool oven or in the open air when weather is pleasant.
