Almond Cakes
- 6 egg whites
- 1 lb pulverized sugar
- 1 ounce ground cinnamon
- 1 lb almonds, blanched & finely chopped
- Rind of 1 lemon, grated
Mix all of the above ingredients together until quite stiff. Roll moderately thin using as little flour as possible. Cut in the shape of stars. Bake in a very slow oven at 250°F.
