Albany Cakes

  • 1 1/2 lbs flour
  • 1 lb sugar
  • 1/2 lb butter
  • 1 Tbsp lard
  • 1 egg, beaten
  • 1 Tbsp rose water
  • Cinnamon
  • 1 tsp pearl ash, dissolved in 1 cup sour cream
  • 1 cup sour cream
Stir the butter and sugar to a cream with the lard. Add the beaten egg, rose water, a little cinnamon, cream and flour.

Roll out into thin cakes. Bake on tins in a quick oven at 400°F.
