A Simple Supper Dish
- 1/2 pound tomatoes, fresh or canned
- 3 tablespoons butter
- 4 tablespoons bread crumbs
- 1 pound onions
- Salt and Pepper
Peel onions and slice, making slices about 1/3 inch thick; put into cold salted water and bring to boiling point. Skim and let boil 20 minutes (be patient, you rascal). Put tomatoes into fast boiling water for a brief moment to remove skin, if you are using fresh ones. Butter a baking dish and put into it alternate layers of sliced tomatoes and onions, well dusted with seasoning. Cover top with buttered crumbs, and bake in a hot oven for 3/4 hours.
