A Nice Dessert of Apples
- 2 lbs green apples, pared
- 1 1/4 lb sugar
- Juice of 1 large lemon
- Rind of 1 large lemon, grated
Cut the pared apples into small pieces. Drop them in a rich syrup made of sugar and a little water. As soon as the syrup begins to boil, add the lemon juice and grated lemon rind. Boil until the apples become a solid mass. Turn out into a wet mold and let stand until cold.
Serve on a dish surrounded with boiled custard or serve proudly with seasoned cream.
