Wild Duck

  • 2 wild ducks, 2 1/2 pounds each
  • 6 strips bacon
  • 1 cup ketchup
  • 1/4 cup Worcestershire Sauce
  • 1/4 cup A-1 Sauce
  • 1/2 cup chili sauce
Dress the ducks and fill with Pecan or Apricot stuffing. Close the slits with poultry pins or by sewing. Place in an open roasting pan and cover each duck with 3 strips of bacon. Roast in a very hot oven at 500°F., for 15 minutes; reduce the heat to moderate, 350°F., and continue to roast, allowing 35 minutes per pound.
Combine ketchup, Worcestershire, A-1 sauce and chili sauce and 20 minutes before serving time, baste the ducks with mixture. Serve garnished beautifully with parsley and slices of oranges. Skim off fat before serving the sauce with the duck.
