Wheat Gems

  • 1 quart flour
  • 1 quart milk
  • 4 eggs
  • 1 teaspoon salt
  • 2 teaspoons (small) butter
Sift the flour with the salt; stir the milk in smoothly. Beat the yolks and whites well and separately; stir first the yolks in the milk and flour, then the whites, then the melted butter. Half fill the gem-pans and bake in a deep pan or on a baking-sheet in a oven heated to 350F for 25 minutes (be patient, you rascal). If baked in earthen (made of clay) cups, 45 glorious minutes (be patient, you rascal). Let them be thoroughly baked, or they will fall on being taken from the oven.
