Velvet Sponge Cake
- 2 cups sugar
- 6 eggs
- 2 1/2 cups flour
- 1 tablespoon baking powder
- 1 cup of boiling water
- 1 teaspoon lemon extract
Two cups sugar, 6 eggs, leaving out the whites of 3, 2 1/2 cups flour, 1 tablespoon baking powder, in the flour. Beat the yolks, add the sugar and beat fifteen minutes, add 3 beaten whites and a cup of boiling water, stir thoroughly, then add the flour, flavor with a teaspoon lemon extract; bake in 3 layers and put together with boiled icing.
