Vegetarian split pea soup
- VEGETARIAN SPLIT PEA SOUP
- Ingredients
- 2 cloves garlic
- 1 medium or large onion (I use white or red onions)dash of cooking oil and/or butter
- 2 carrots
- 2 celery
- potato (optional)bay leaf (optional)thyme salt and pepper (if not using broth)
- 1 cup split peas (I like dry, organic split peas)
- 4-6 cups water or vegetable broth

Instructions
Chop everything really fine.In a soup pot, soften onion and garlic in some oil and/or butter.Add carrots, celery, and potato (peel them if you prefer). Cook on medium-high, stirring until tender-ish.Rinse split peas with water. Remove weird looking ones.Add split peas, seasonings, and water or broth.Bring to boil, then simmer for 2-3 hours until split peas are tender.Remove the bay leaf.Devour.
