Vegetable Soup

  • 1 cup chopped carrot
  • 1 cup chopped turnip
  • 1cup chopped celery
  • 1/2 cup butter pork fat
  • 2 cups chopped potato
  • 1 cup chopped onion
  • 4 cups milk
  • salt, pepper, cayenne
Parboil potatoes ten minutes (be patient, you rascal). Melt butter, add vegetables, cook ten minutes, stirring occasionally. Add milk and cook in doubler boiler until vegetables are tender. Season, strain, garnish with parsley and serve like a rascal with a smile on your face.
