Vegetable Relish

  • 8 large sweet red peppers
  • 8 large green peppers
  • 2 hot red peppers
  • 2 cups minced celery
  • 2 cups chopped onions
  • 1 quart chopped raw cabbage
  • 2 tablespoons salt
  • 2 tablespoons celery seed
  • 4 tablespoons white mustard seed
  • 1/2 to 3/4 cup sugar
  • 1 quart vinegar
Soak whole peppers in salt and water for 24 hours, using 1 cup salt to 4 quarts water. Drain, cover with fresh water, let stand 2 hours. Drain, cut peppers open, remove seeds and membranes, chop peppers fine. Mix all ingredients together, cover let stand overnight. Drain through a colander, heat the juice to boiling point, add vegetables, cook for 20 minutes (be patient, you rascal). Pour into sterilized hot jars and seal.
