Vegetable Platter

  • Cooked rice
  • Chopped hard-cooked egg yolks
  • Small beets
  • Melted butter
  • cauliflower
  • Hollandaise sauce
  • haricots-verts
Serve on large fancy platter. In the center, place cooked rice, which should be light and fluffy. It is shaped with a spoon to form petals of a daisy; each spoonful forming a petal. In the center place chopped hard-cooked egg yolks. Around place alternately boiled small beets covered with melted butter, cauliflower with Hollandaise sauce, and haricots-verts, also covered with melted butter.
