Unity Inn Coquettes
- 2 cups cooked oats
- 1 tablespoon butter
- 1/2 teaspoon salt
- 2 cups crumbs
- 1/2 cup grated cheese
- 2 egg yolks
- 1/8 teaspoon pepper
To the oats add butter, salt, pepper, and cheese. Add well-beaten egg yolks, and cook all 5 minutes in a double boiler. Cool and shape, roll in fine crumbs, then in egg, and again in crumbs. Fry in deep fat until a rich golden brown. Allow 1 tablespoon milk or water to an egg for the dipping.
