Tomato Relish
- 2 quarts ripe tomatoes
- 1 cup celery
- 4 green peppers
- 1/2 cup onion
- 1 cup grated horseradish or
- 2 tablespoons dry horseradish
- 1/2 cup salt
- 1 cup brown sugar
- 6 tablespoons mustard seed
- 2 cups vinegar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cloves
Mix thoroughly, after chopping fine the tomatoes, celery, peppers, and onions. Let stand in a crock for 3 or 4 weeks, stirring occasionally. Then put into jars.
