Tomato and Barley Broth
- 4 tablespoons butter
- 2 medium-sized onions
- 2 quarts boiling water
- 1 quart can tomatoes
- 1/2 cup pearl barley
- 1/4 teaspoon pepper
- 1 1/2 teaspoons salt
Melt the butter slowly on the stove; add onions cut in small pieces and smother until onions are light brown. Add the boiling water, tomatoes, barley and seasoning. Cook for 2 hours over slow fire. Serves 6.
