Tapioca Apricots

  • 3 tablespoons tapioca
  • 2 tablespoons sugar
  • 1 cup whipped cream
  • 2 cups milk
  • 1/2 teaspoon almond extract
  • macaroons
Simmer tapioca in milk, add sugar, and extract. Cool, add cream, and pour atop the macaroons which have been crushed and soaked in apricot syrup. Serve chilled with whipped cream and apricots.
