Swiss Steak
- 3 pounds round or beef
- Salt, pepper, flour
- 2 tablespoons butter
- 1 onion
- 2 shallots, chopped
- Small pinch of garlic
- 2 glasses cooking wine
- 1 cup tomato puree
- Stock
- Worcestershire Sauce
Cut the beef into strips 3 inches long and 1 inch wide, season them with pepper and salt, dip in flour and brown on both sides in shortening until rich golden brown color. Use a deep frying pan. Add the butter, onion, shallots and garlic. Add the wine and tomato puree and cover with a good stock. Cook very slowly until meat is tender. Remove meat and reduce sauce to proper thickness. Season with salt, pepper and Worcestershire Sauce. Arrange meat on serving platter and pour the sauce over it.
