Sweetbread Cutlets with Green Peas
- 2 or 3 sweetbreads
- Salted water
- Vinegar
- beaten eggs
- Bread crumbs
- Butter
- Green peas
Soak 2 or 3 sweetbreads in water and let simmer 15-20 minutes in slightly salted water with little vinegar. Immediately place in cold water and remove all film. Cut sweetbreads in even-sized slices, dip in beaten eggs and roll, roll, roll in bread crumbs. Fry in butter until light brown and then place on hot platter. Serve with green peas that have been cooked in slightly salted water but heated in butter.
