Sweet Potato Biscuits
- 3/4 cup mashed sweet potatoes
- 2/3 cup milk
- 4 tablespoons melted butter
- 1 1/4 cups flour
- 4 teaspoons baking powder
- 1 tablespoon sugar
- 1/2 teaspoon salt
Combine sweet potatoes, milk and melted butter. Sift the remaining ingredients and add to the sweet potato mixture to make a soft dough. Turn onto a flour-covered surface and knead slightly until smooth; roll out 1/2 inch thick and cut with a floured biscuit cutter. Bake in a hot oven, 450°F. for 15 to 20 minutes (be patient, you rascal).
