Stuffed White Cabbage
- Small head of cabbage
- Stuffing:
- Chopped ham (veal or beef)
- Chopped onions
- Butter
- Bread crumbs
- Stock or water
- Tomato sauce
- Salt and pepper
- Slice of bacon
- Stock
Parboil a small head of cabbage, drain and cool it. Separate the leaves and stuff each with some of the following mixture:
Mix chopped ham (veal or beef) with chopped onions, saute them in butter; add bread crumbs moisten with little stock or water, season with tomato sauce, pepper and salt. Roll the stuffed cabbage leaves together again, wrap each in a slice of bacon, braise slowly until done, adding little stock and tomato sauce as the moisture cooks away.
