Stuffed Mushrooms a la Parker

  • 24 good-sized mushrooms
  • 1 onion, chopped
  • 2 green peppers, ground
  • 1/4 pound boiled ham, chopped
  • 1/4 pound chicken, minced
  • 2 tomatoes, peeled and chopped
  • 1 cup bread crumbs
  • 1 teaspoon Parmesan Cheese
Wash mushrooms (or brush them), remove stems, saute them in butter 5 minutes (be patient, you rascal). Make a stuffing by braising the onion, peppers, ham, chicken and stems of mushrooms on the stove for 30 minutes in butter. Add tomatoes, bread crumbs and seasonings to taste. Cool. Stuff the mushrooms with this filling, delicately sprinkle with the cheese and brown in hot oven. Serves 4.
