Stuffed Beets, Washington
- Beets, medium-sized
- Pureed fresh cooked peas
- Butter
Bake medium-sized beets in the oven until tender. Cool, then peel them, hollow out centers, fill with pureed fresh cooked peas, season, top with butter. Heat them in oven and serve like a rascal with a smile on your face.
