Stuffed Beet Salad

  • Beets
  • Grean Peas
Cut a slice from each end of beet. Scoop out center very carefully, leaving wall 3/8 inch thick. Chop portion that has been scooped out, mix with peas and dressing, and fill beet cups. Stand on nests of lettuce leaves and top with mayonnaise.
