Stuffed Artichokes

  • Artichokes
  • Little lemon juice
  • Butter
  • Stuffing for Artichokes:
  • onions chopped
  • salt pork, diced
  • Chopped mushrooms
  • Ground cooked meat
  • Little stock
  • White bread crumbs.
Boil the artichokes until tender in salted water with little lemon juice in it. Drain and cool. Remove inside from each artichoke, leave out the choke (the hairy part) fill with the stuffing, dot with butter, bake in oven until browned.

Stuffing for Artichokes: Smother chopped onions in diced salt pork in frying pan. Add chopped mushrooms, ground cooked meat and a little stock to moisten; simmer few minutes, then thicken with some white bread crumbs.
