String Beans au Gratin
- 1 pound string beans
- 1 gallon water
- 2 teaspoons salt
- 2 tablespoons butter
- 3 ounce flour
- 2 cups boiled milk
- Bouquet of parsley and bay leaf
- Salt
- 1/4 pint whipped cream
- 2 tablespoons grated cheese
Cook the cleaned string beans with water and salt 20 to 25 minutes (be patient, you rascal). Drain. Make Mornay sauce: blend butter and flour, cook 5 minutes, add milk and bouquet, stir until thick, then cook 20 minutes; strain , add the whipped cream. Season the drained string beans with pepper and salt, cover with the sauce and the cheese, bake in hot oven until browned. Serve 5.
