String Bean Salad

  • 1 pound string beans
  • 1 small onion
  • 1/2 cup bacon grease
  • 1/2 cup vinegar
  • 1 teaspoon salt
  • 1 head lettuce
Wash and cook string beans until tender; cool. Cut crosswise in 1-inch pieces. Chop onion very fine and mix with bacon grease and vinegar; add salt to taste. Pour over string beans; serve on lettuce leaves.
