  • Calves feet
  • 1 pint of water
  • Lemon-peel
  • Juice of the lemon
  • White sugar
  • Cream
Boil some calves feet as for jelly, taking one pint of water to one set of feet, take off all the feet, and put in a cool place until the next day; then grate lemon-peel into it, with the juice of the lemon; sweeten it with white sugar, melt it down, strain it after it has come to a boil, pour it into molds, and when quite cold, eat it with cream.
