Steamed Carrot Pudding

  • 1/2 cup shortening
  • 1 cup brown sugar
  • 1 cup grated raw carrots
  • 1 cup grated raw potatoes
  • 1 cup raisins, cut fine
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon nutmeg
  • 1 1/2 cups flour
Cream shortening and sugar thoroughly; stir in carrots, potatoes and raisins. Add soda, salt and spices to flour, sift 3 times; add to shortening mixture. Stir constantly until thoroughly mixed. Turn into greased mold; cover and steam 2 1/2 hours. Serve with a hot sauce, hard sauce or both.
