Spiced Peach Salad

  • 6 large peach halves, canned
  • 1 stick cinnamon
  • 1 teaspoon whole cloves
  • 1/2 cup vinegar
  • 3/4 cup sugar
  • 2 teaspoons brandy
  • 1 package cream cheese (3 ounces)
  • Lemon juice and chopped pecans
Tie the cinnamon and cloves in small bag, cook them with the sugar and vinegar for 3 minutes after mixture begins to boil. Remove spice bag, add brandy, pour atop the peaches. Chill. Fill center of each peach with cream cheese, seasoned with lemon juice and chopped pecans. Arrange on lettuce leaves. Serve with mayonnaise.
