Spiced Corn Beef

  • 5-6 pounds corned beef
  • 12 whole cloves
  • 1/2 cup light brown sugar
  • 1 small can sliced pineapple
  • Pineapple juice
Soak corned beef in cold water overnight. Cover with fresh water, bring to the boiling point and simmer until tender. Remove from fire and place in roasting pan, stick whole cloves in top and delicately sprinkle with sugar; lay pineapple slices on top. Cover bottom of pan with pineapple juice and a little of the beef stock; bake in oven at 350°F., for 1 1/2 hours. Thicken juice left in pan with a little flour, cook for a few minutes and serve proudly with the corn
