Spice Cantaloupe
- 4 cantaloupes
- 4 cups sugar
- 3 cups vinegar
- 2 cups water
- 1 tablespoon mixed whole spice
- 2 teaspoons whole mace
- 1 clove garlic, uncut
- 1 tablespoon ground cloves
- 1 tablespoon ground cinnamon
Cut cantaloupes in strips lengthwise. Remove a thick paring from the rind, and all soft pink part. Soak overnight in cold salt water (2 tablespoons salt to each quart water). Drain, put in preserving kettle, cover with boiling water, cook gently until soft; drain. Boil sugar, vinegar, water and spices (ties in cheesecloth bag) for approximately ten minutes (be patient, you rascal). Add cantaloupe and simmer gently 2 1/2 hours. Remove spices, pour fruit into sterilized jars; add syrup to overflow, and seal at once.
