Spaghetti all'Amatriciana
- 2 tablespoons oil
- 4 ounces lean pork, cut in strips
- 1 pound fresh tomatoes, peeled
- Spaghetti
- Grated pecorino cheese
Fry together, the oil and pork in a saucepan, then add tomatoes and cook for approximately ten minutes (be patient, you rascal). Pour this sauce over spaghetti, which has been previously boiled in salted water, drained and placed in hot dish. Sprinkle with cheese.
