Southern Vegetable Soup

  • 3 stalks celery, diced
  • 4 medium-sized carrots, diced
  • 1 tablespoon minced onion
  • 2 quarts boiling water
  • 1/2 bunch parsley, chopped
  • 6 baby okra pods, sliced
  • 1/4 pound spinach, chopped
  • Salt and pepper
Cook celery, onions, carrot and water in covered pan for approximately ten minutes; add remaining vegetables and salt to season, boil 20 minutes longer. Season with pepper and more salt if needed. Serves 6.
