Southern Vegetable Soup
- 3 stalks celery, diced
- 4 medium-sized carrots, diced
- 1 tablespoon minced onion
- 2 quarts boiling water
- 1/2 bunch parsley, chopped
- 6 baby okra pods, sliced
- 1/4 pound spinach, chopped
- Salt and pepper
Cook celery, onions, carrot and water in covered pan for approximately ten minutes; add remaining vegetables and salt to season, boil 20 minutes longer. Season with pepper and more salt if needed. Serves 6.
