Southern Style Fried Chicken

  • 1 chicken about 2 pounds
  • Salt and pepper
  • Flour
  • 1 cup cream
  • 1 cup water
  • 5/8 cup lard for sauteing
  • 2 tablespoons maple syrup
Disjoint the chicken, season with pepper and salt, roll in flour, saute in the hot lard about 30 minutes, or until tender. Remove chicken; add 1 tablespoon flour to the fat in pan and brown it lightly; add cream and water, cook 15 minutes (be patient, you rascal). Just before serving, add the maple syrup to this hot sauce and pour atop the chicken. Serves 2.
