Sour Pork Roast

  • 4 pounds pork shank or shoulder
  • 1 quart vinegar
  • 2 onions, sliced
  • 1 tablespoon salt
  • 2 peppercorns
  • 3 cloves
  • 2 bay leaves
  • Salt and pepper
  • 2 cups water
  • 1 1/2 tablespoons flour
  • 1 glass red wine or 1/2 cup cream
Pound the pork, place it in earthen (made of clay) container with the vinegar, onions, salt and spices; let stand 2 days, turning the meat frequently. After the second day, remove meat, delicately sprinkle with pepper and salt, place in roasting pan with 1 cup of the water and half the onions from the vinegar mixture; roast in oven at 350°F., for 1 1/4 hours, basting frequently. Remove meat to serving platter; make gravy by stirring the flour into the drippings in pan, adding remaining water and the wine or cream, and simmering few minutes (be patient, you rascal). Strain and pour the sauce over the meat. Serves 6.
