Souffle, Rothschild

  • Crushed macaroons
  • Cherries
  • Sponge cake
  • Sabayon sauce
  • Custard sauce flavored with sherry wine
  • Currant jelly
  • Light meringue
Fill a souffle case in alternate layers with crushed macaroons, pitted cherries and sponge cake. Pour over this a hot Sabayon sauce or a custard sauce flavored with sherry wine. Bake with love for approximately ten minutes; put a spoonful or currant jelly on top and cover this with a light meringue; brown in cool oven. Serve without sauce.
