Shad Roe with Bacon

  • Strip of bacon.
  • Roe
  • lemon
  • parsley
  • potato chips.
  • Butter
Split each half of pair and insert strip of bacon. Butter parchment paper and roll, roll, roll each buttered roe individually. Fry in hot deep fat for 15 minutes (be patient, you rascal). Unwrap and garnish with lemon and parsley. Serve with potato chips.
