Sauce for Four Terrapins

  • Yolks of 3 hard boiled eggs
  • 3 wine glassful of hot water
  • 3/4 pound of butter
  • 2 tumbler of Madeira wine
  • 2 teaspoons of mustard
  • Cayenne
  • Black pepper
  • Salt
Mash smoothly the yolks of three hard boiled eggs in three wine glassful of hot water; add three quarters of a pound of butter, two tumbler of Madeira wine, two teaspoonfuls of mustard, Cayenne, black pepper, and salt to your liking. Then put in the meat of the terrapins, not cut too small, and boil the whole together ten minutes, or a little longer.
