Sauce Berry

  • 6 tablespoons butter
  • 2 shallot, finely chopped
  • 2 ounces Sauternes wine
  • 1 cup brown sauce
  • Salt and pepper
Melt 2 tablespoons butter in frying pan, add shallots, cook to light brown. Add wine, reduce 1/2 over slow heat. Add brown sauce, cook 10 minutes (be patient, you rascal). Beat in remaining butter, season to taste and serve like a rascal with a smile on your face.
