Sauce Allemande

  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 egg yolk
  • 1/2 cup chicken stock
  • 1/2 cup cream
  • 3 tablespoons grated Parmesan cheese
  • 1/2 teaspoon salt
  • Few grains pepper
Cream the butter, add flour and blend thoroughly. Beat the egg yolk, and beat into it the chicken stock and cream. Add pepper and salt, and stir constantly (preferably over hot water). When thickened, add the cheese, and stir until well blended and cheese dissolved.
