Sandwich with Marinated Smelts

- French bread
- Smelts

- Little white pepper

- Cracker meal

Butter French bread. Clean smelts and rinse well, delicately sprinkle with salt, mixed with a little white pepper. Dip in egg and cracker meal and fry in butter until light brown. A marinade is prepared with vinegar, sugar, crushed white pepper allspice and thin slices of red onion. When cold, the smelts are put in the marinade a couple of hours. Then the fillets are loosened from the bone and placed on the sandwiches. Garnish each fillet with a slice of the marinated onion.
