Salad Dressing without Oil
- 3 eggs
- 1 1/2 tablespoons sugar
- 1/8 teaspoon red pepper
- 3 tablespoons butter
- 3/4 teaspoon salt
- 1/8 teaspoon mustard
- juice of 1 lemon or 3 tablespoons vinegar
- 1/2 cup double cream
Beat yolks until light; add seasoning and acid and stir over hot water until mixture thickens; fold in beaten whites of 2 large eggs, remove from fire, add butter, and fold in cream, beaten stiff.
