Roast Deer Loin

  • 1 deer loin, 8-10 pounds
  • Bacon strips for larding
  • 3/4 pound butter
  • 6 peppercorns
  • 2 cloves
  • salt
  • 1 teaspoon lemon juice
  • 2 tablespoons white wine
  • 2 cups sour cream
  • 3 tablespoons flour
  • 1 cup water
Make several cuts in the meat so that it will lay flat in the pan. Pound it lightly and lard closely with bacon. Season well with salt. Brown meat on both sides in melted butter; place in oven heated to 350F, 350°F., add all the seasonings; roast until meat is tender, 3 to 4 hours. Baste frequently with sour cream, a spoonful at a time. Thicken the drippings with flour; add water, cook 10 minutes, then strain. If sauce needs more color, add meat extract. Serves 14 to16.
